This evening, Shog made fresh mozzarella, then ricotta, and is now attempting brunost! He wants me to ask our local goat keepers if they'll sell us whey so that he can make gjetost, as well. I'm very excited about his sudden interest in cheese making; his warm, just-formed mozza was the best I've ever had!

He was thinking about trying to make Cheddar, but having the process described to him made him decide that there were plenty of people already making it. :P

You haven't seen some of my fails. Like the sourdough boule I made today. My starter wasn't ready yet and I wasted the filling ingredients. Ended up with a doorstop. :(

I'm really tempted to make it again and just throw some yeast in there. Give up on the sourdough starter. We'll see.

I don't know how long Shog's interest in cheese making will last, but I'm going to make the most of it!
